What is it?

This is a blend of 60% Pinot Noir and 40% Chardonnay from the 2015 harvest. The white grapes come from vines on the Rougeux plot that were 33 years-old in 2015, and the black grapes from vines on Fravaux, that were 31 years-old in 2015.

What is it like?

Bright, pale golden yellow colour with silvery yellow highlights, this cuvée presents fine, persistent bubbles. The nose is delicate and very expressive, dominated by aromas of smoked limestone, lemon, peach, almond, blackcurrant, liquorice, ginger, biscuit and flowers. The attack is clean and fresh, with a soft, creamy effervescence. Fruity and intense, the palate is underscored by a gentle lemony acidity combined with a marly minerality that gives this champagne a generous character. This continues into a fresh, saline, juicy finish.

Our suggested pairings: As an aperitif, accompanied by parmesan and hemp seed shortbread; Thai-style beef and basil parcels with fresh soy beans; Roasted veal chop with chanterelle sauce.
